It’s the most elegant Domus to date, with a level of precision that is not easy to achieve. I love this 2016, a subtler wine that is more introverted, shy and serious but with a level of complexity and depth, refinement and nuance I have not seen in any previous vintages. On the palate there is a luscious full body, firm tannins and a well-built structure which will help this wine age gracefully over the next decade or so. The nose opens with intense notes of cassis, black cherry and dark plum along with hints of baking spice, tobacco leaf and liquorice. A small quantity of Petit Verdot, Merlot and Cabernet Franc is often also added to enhance the beauty and complexity of the finished wine. Once in the winery the Cabernet Sauvignon grapes are fermented using naturally-occurring yeasts and then matured in French oak barrels for 16-18 months. Yields are kept very low to maximise quality and the vineyard is harvested manually vine by vine to ensure optimum ripeness. Set in the foothills of the Andes, this 45-acre vineyard is set on rugged gravelly slopes and cooled by breezes from the nearby mountains. In the past the harvest had been sold to.
